Hibiki 21yr Whisky Review
I had been waiting a long time to try this, was well worth the wait. Especially considering I got to try it at my favourite bar in the world, Shot Bar Zoetrope in Tokyo.
Notes
Eye: Noticeably darker that the 17yr old.
Nose: Cherries with a bouquet of flowers and deep hints of vanilla. Stunning.
Palate: Perfect harmony of sweetness and floral elements, it's like the 17yr old but kicked up a few notches. Cherry sweetness is just divine.
Finish: Incredibly long with great drying oak influence. The oak isn't at all overpowering but it is present and takes command to round the overall profile out. On the finish I noticed a little peat mixed in with the gorgeous fruits and flowers.

A little bit more sherry influence here than is found in the 17yr old release, overall the mouthfeel is a bit more oily and chewy too.
